It was our first day at our new residency at Fairly Square yesterday and I’m not sure how we did it, but we totally nailed it. Our exec chef was stranded away skiing so we only had one chef, we were shorted on our food orders, we had a new team, and we were within someone else’s space. Plus it was Friday 2nd January, a weird half-night, and we didn’t know what to expect. It was complete pandemonium all day long.
As the deadline of 6pm opening counts down, we are all running around like headless chickens – prepping, cooking, setting up the tables and programming the EPOS, and doing all the magic touches (lights, flowers, music). It was such a close call on the food that we didn’t agree and print the menu until 3 minutes before the first customers arrived. And all the time the phone is going like the clappers. Bookings for tonight. We realize we are not only getting full but needing to seat a couple of tables twice. People are actually waiting. We had to turn down some customers.
It was a recipe for an overloaded debacle of a first night. But by jove, through sheer hard work and passion we delivered an amazing service. Everyone spoiled themselves without spoiling themselves! My favourite quotes of the evening were: ‘This place is so chilled and awesome. London is dead tonight but this is where the party’s at” , and: “It was your first night?! I had no idea!” and “You could never tell this is a pop up”.
I can’t imagine there’s many seasoned hospitality veterans who’ve had a first night like that. I was almost in tears with relief and gratitude. We haven’t had much of a relaxing Christmas but that was our reward. Thank you London, and WELL DONE TEAM.
