A while ago we held an event at Redemption Portobello called Rawsome Revolution and it does feel as though there is a raw food revolution about to happen. For those of you unfamiliar, it is about eating vegetables, nuts and seeds in as raw a form as possible so you can get the most nutrients and enzymes out of them. The practitioners are real evangelists and talk about how eating raw has changed their health and their life. It’s beginning to catch on in the media, and if Redemption is anything to go by, it’s about to catch on in the hospitality sector. I went round to see my brilliant new executive chef this week and she rustled up a raw salad, full of avocado and broccoli, nuts, seeds, microshoots and all kinds of funky little things. You might think it inappropriate for a cold autumn night but I kind of bounced home in the misty fog after dinner. Can’t wait to be trading in January so I can eat like it every day :)
