Our experience of setting up Redemption at Fairly Square was a journey to say the least! And I’d be lying if I said it wasn’t stressful at times.
JD, our manager, started mid-December last year so we had just 2 weeks to organise everything – slightly pressurised!
Setting up Redemption at Fairly Square happened over the festive period so it effectively ruined our Christmases – although New Year’s Eve was the worst, as we were on site on the January 1st, while everyone else was getting over their hangovers in bed.
It was then a race against the clock to get ready in time for the opening.
On top of this we obviously had to produce food for our customers. But unfortunately our chef Andrea got stuck skiing, which meant our other chef had to take on the task alone!
We were so exhausted by the first evening, and had no idea whether anyone would actually turn up! But it was an incredible evening, and it was so great to see the thing we’d worked so hard for coming to life. We had people queuing out the door onto the street! It was a wonderful feeling.
So even though at times it was challenging, it was a small price to pay for the end result.
