We came to the end of our residency in March and by the end we were exhausted! And definitely started to question why we (a) did a pop-up at all and (b) why we started said pop-up on January 2nd.
But in all seriousness, it went incredibly well and we’re so excited about the next stage of the business.
So my main job at the moment is making sure we have permanent sites in play, so we need to get those leaseholds signed. I’m currently dealing with agents, solicitors and the bank. (Ie. All the boring parts of running a business!) But at the end of the day, if we don’t get all this stuff sorted, we won’t have time for all the exciting stuff.
Regarding said exciting stuff, we’ve found our cutlery, crockery and furniture for the new place. All pretty essential for, you know, sitting and eating! It was love at first sight and I can’t wait for you all to see it.
JD has also been busy contacting suppliers to make sure we get the best ingredients for our mocktails and dishes, it actually takes a lot of time to get it right because our needs are so specialist.
